Will foam stop condensation on a steel shop?
Closed-cell on the underside of the panels is how most crews keep indoor moisture off cold steel. You still need ventilation, and you still need to fix roof leaks. Ask what indoor humidity they are assuming.
Can I use the same square-foot price as a house attic?
No. Different prep, different product mix, often a different crew day. Compare shop bids to shop bids.
Do barns need an ignition barrier too?
Occupancy and local code decide. A heated shop people work in is not a hay shed. They should say which coating they will use, or why they think they can skip it.
